I have been running quite a bit lately and felt the need this morning to take in some protein to compensate for the wear & tear I’ve been doing on my muscles. Now, I’ve always been pretty skilled at cooking with what odds & ends I already have in the kitchen, so in addition to the whey protein I had in the pantry, I pulled out raw peanut butter. I had some skim milk in the fridge which I combined with a handful of frozen (unsweetened) strawberries and a carton of Light-and-Fit strawberry banana yogurt from the freezer. I was flipping through my Betty Crocker Good and Easy Cookbook and found a blender recipe called Strawberry Cooler!
The recipe makes 4 servings, so I cut things in half. The result was a low-sugar, guilt-free surprise!
Recipe:
1 cup whole strawberries (mine were cut & frozen)
1/2 cup milk (I used a quarter of skim)
1 container of strawberry yogurt (mine was Light-and-Fit Strawberry-banana which had been frozen)
(additions:)
3 Tbsp. raw peanut butter
1 scoop vanilla whey protein powder
1 tsp. vanilla extract
